The UUCC Climate Crisis Team’s Plant-Rich Diet Committee would like to thank all of you who completed our plant-rich diet survey. We received 88 responses! That’s amazing!
Your answers indicated that many of you are interested in discovering quick and easy vegetarian meals; taking part in a Vegetarian Restaurant Dining Group; and attending Vegetarian Potlucks at UUCC (with accompanying recipes). We heard you, and we’re on it! Keep an eye out for our first dining group, hopefully in May.
If your household is small, and you want prepackaged, vegetarian meals, Amy’s is a good brand. Several of this brand’s options are vegan and many are gluten-free. You can find Amy’s meals at a number of grocery stores.
And if you’d like quick and easy do-it-yourself meals that require some cooking but no grocery shopping and little prep, meal kits may be the way to go. Blue Apron, Dinnerly, and HungryRoot are just a few options, but there are many more.
You also indicated that you were unaware of UUCC’s Meatless Monday Cookbook (which can be found here: uucolumbia.net/climate-change/cookbook). Please check out some of our members’ favorite recipes. More are on the way.
