Nearly a dozen new recipes have been added to UUCC’s Meatless Monday Cookbook, recipes like Vegan Italian Meatballs; Caramelized Onion, Mushroom and Basil Pizza; and Moroccan Vegetable Tagine.
Eating more plant-based meals has been shown to improve health, and it’s also one of the best steps you can take to help reduce climate change. And, now that meat has become less available and therefore more expensive, eating more vegetarian meals will also help your wallet!
