Community Event — Holiday Plant-Based Cooking Webinar with Ruby Lathon, PhD

The UUMANE Food Policy Working Group and Act for Climate Today! (ACT!) of UUC Fairfax proudly present rocket scientist turned nutritionist, health coach and vegan chef, Ruby Lathon, Ph.D., in a free Zoom Holiday Plant-Based Cooking Webinar on Sunday, November 12, at 12:30pm.  Dr. Ruby, a favorite of the Veg Society of DC, will demo some fabulous festive foods for a holiday feast. The menu will include mushroom wellington tarts, chocolate mousse with raspberry coulis, and cashew nog. Additionally, members of ACT! and the Working Group will prepare some dishes, butternut squash lasagna, sriracha brussels sprouts, and kale and cranberry salad in advance for a brief show and tell. Recipes will be provided for all of the foods and you are invited to cook along with Dr. Ruby, who will talk about the nutrition and appeal of these foods and answer audience questions. Dr. Ruby, once an industrial engineer with NASA, became a holistic nutritionist after healing herself of thyroid cancer by drastically changing her lifestyle through a plant-based diet. She was featured in the film, What the Health. She also has served as Nutrition Policy Manager at the Physicians Committee for Responsible Medicine and is the host of “The Veggie Chest” plant-based cooking show on YouTube.
